“Need something sweet…” — words I think to myself as the late-night hours approach on a typical Friday or Saturday. If you can relate, this recipe is definitely for you.

Recipe
Ingredients:
Soak
4 cups of milk
2 cups of heavy cream
¼ cup of condensed milk
¼ cup brown sugar
1tbsp lemon juice (or 1tsp lime juice)
1tbsp ground cinnamon
1tsp ground all-spice
1tsp ground clove
1tsp ground nutmeg
2 beaten eggs
4 medium-sized honey crisp apples (diced)
4, 1-1.5 inch thick slices of bread (brioche or French works best in my opinion)
4tbsp cold butter
Method:
Preheat your oven to 400 degrees, then wash your produce. Peel then dice your apples and set them aside. Bring a skillet to medium-low heat, then add your cold butter to the pan.. allow this to foam (but not burn) then add the diced apples into the skillet. Season with salt and a ¼ cup of brown sugar. Stir often, letting these cook until tender.
While your apples cook, prepare your soak by pouring the wet ingredients into a mixing bowl. Whisk well so that the egg is well-incorporated. Add your dry ingredients and continue to whisk. Add salt if you haven’t already. By now, your apples should be done.. set aside.
Butter a loaf pan or baking dish.
Cut your bread into cubes (you want enough to fill just below the brim of the pan you’re using), then add them to your pan/dish. Add your apples and mix well with the bread. Pour in your soak (pour about ¾ full of the pan you’re using.. do not pour too much or it’ll take forever to cook through).
Cover with foil and place in the oven for 40 minutes.
At 40 minutes just check with a toothpick to see if it’s still raw or not. You want a moist texture, not a wet or dry one.
Towards the end of the cooking process, pour the rest of your soak into a medium-heated skillet. Stir FREQUENTLY so that the eggs do not curdle. You want a thick-ish sauce/glaze-like consistency (~4-6 minutes depending on what skillet you use). Set aside (can reheat later)
Once your loaf is ready, broil on high for ~5 minutes in order to form a crust over the top… remove from the oven and set aside to rest.
optionally, remove a slice and sear in a skillet for a crispy bottom.. real nice texture here
Top with vanilla ice cream, grated nutmeg, salt, and your crème anglaise 💥💥
